…start of summer, that is! At last, the beautiful watermelon is in season again and we just can’t get enough of this thirst-quenching refreshing colourful vitamin-packed sweet & salty salad number! Please, dig in…
INGREDIENTS:
watermelon cubes (cold)
feta cheese
fresh mint
fresh lime/lemon
olive oil
balsamic glaze*
METHOD:
Place watermelon chunks on individual plates or a large serving platter.
Sprinkle crumbled feta.
Add torn mint leaves (reserve whole ones for the centre piece).
For the dressing: mix olive oil + half a lime/lemon juice and pour over the salad.
Finish off with a flourish of balsamic drizzle (optional*)
Enjoy the wonderful mix of these refreshing sweet & salty flavours!
